Lemon blueberry shortbread bars

Ingredients

1 1/4 cups all-purpose flour 11/2 cup powdered sugar 11 Tbsp cornstarch 8 Tbsp unsalted butter 1 tsp vanilla extract 1 pinch salt

Shortbread Crust

Preheat oven to 350 F Grease an 8x8 pan  Pulse crust ingredients in  a food processor Press dough into the bottom of baking pan   Bake for 12 minutes Cool pan on a wire rack

Ingredients

4 large eggs 1 cup sugar 11/2 cup lemon juice 2 tsp lemon zest 1/2 cup all-purpose flour 1 cup fresh blueberries

Lemon Curd

Whisk all ingredients (except blueberries) in a bowl  Pour over baked crust  Top with blueberries Bake 25 - 30 minutes   Cool 1 hour at room temp Refrigerate 2 hours
