blackberry oat mufins

Made from scratch with no refined sugar, these wholesome breakfast treats are the perfect use for summer berries.

Ingredients

1 cup old fashioned oats 1 cup whole milk 1/2 cup unsalted butter, melted 1/2 cup honey 1 egg 1 tsp vanilla 1 1/4 cups flour 1 tsp cinnamon 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 1/2 cups fresh blackberries

Instructions

– Preheat oven to 425 degrees and place paper liners in  muffin tin.  – Soak  oats and milk in a bowl for 30 minutes. – In a 2nd bowl whisk butter, honey, egg and vanilla – In a 3rd bowl, sift together flour, cinnamon, baking powder, baking soda and salt – After oats have soaked, stir into wet ingredients.

Instructions

– Stir  dry ingredient into wet then  gently fold 1 cup of blackberries into the batter.  – Distribute batter evenly among 12 muffin liners. Top with remaining blackberries and sprinkle with oats. – Bake for 5 minutes at 425 degrees. Reduce temp to 350 degrees then bake for 15 additional minutes . -- Cool in the muffin pan for 5 minutes. then place muffins on a wire rack to cool completely.
