I’m a bad mom.
My son has been out of vitamins for days and it’s totally my fault. To clarify, he’s responsible for chewing them, I’m responsible for replacing them. Only I keep forgetting to add gummy vitamins to the grocery list. Today I filled my cart with all the essentials (like mini chocolate chips and M&M’s) and then came home without any freaking vitamins yet again.
It wouldn’t be a big deal if he actually ate fruits or vegetables but without vitamins to supplement his diet my kid will get scurvy. Fortunately, it takes awhile for the symptoms to appear so before he gets blue spots all over his skin he’s getting blue, red, yellow and orange speckled monster cookies as an after-school snack.
Obviously I’m only half as bad as I thought. At a minimum, having freshly baked cookies as soon as you get off the bus should elevate my mothering rank from crappy to piss-poor.
Unquestionably, monster cookies are the reigning king of cookies. They’re literally four of the best cookies fused into one: peanut butter, oatmeal, chocolate chip and M&M’s. Yep, you heard me, M-and-freaking-M’s. And this cookie, a monster in both name and size, is chock-full of those colorful little candies.
Without a doubt, M&M’s are my kryptonite. If Pennywise pulled up in a minivan and then tried coaxing me inside with M&M’s, I’m getting in. No questions asked. Well, maybe I’d ask if he had peanut or plain but you get the point. Forget the creepy clown, nothing’s scarier to me than a minivan, but I’m risking the ride for free M&M’s.
Road tripping with a killer clown in exchange for candy may sound like a questionable life choice, but the more M&M’s I have the more monster cookies I can make. It’s sound logic, especially once you’ve tasted the recipe for yourself.

Ingredient Tips and Tricks
Creamy, processed peanut butter works best for this recipe. Do not substitute all-natural or chunky peanut butters are likely to result in dry, crumbly cookies.
The eggs need to be at room temperature before beginning. If you’ve forgotten to take your eggs out of the refrigerator ahead of time then speed up the process by placing them in a bowl of warm water. Don’t use hot water; we want to warm the eggs, not hatch them.
Butter also needs to be at room temperature so let it sit out for an hour or so before starting the recipe. Resist the temptation to nuke your butter in the microwave because it will get melty in spots. Melted butter is perfect for hot buttered rum, but not monster cookies.
Use quick oats for the best monster cookie texture. Old-fashioned oats may be substituted if they are pulsed in the food processor a few times to break them down a bit.
Preparation Tips and Tricks
Monster cookie dough needs to be chilled 30 minutes before baking. Chilled cookie dough is more hydrated than unchilled and spreads less in the oven.
Remove monster cookies from the oven while they are still soft in the middle. Slightly underbaked is the key to a chewy texture.
How to Store Monster Cookies
Monster cookies will keep at room temperature for up to a week. Cover with plastic wrap or keep in an airtight container.
Baked monster cookies can be frozen in an airtight container up to 3 months.
Unbaked cookie dough can stored in an airtight container then frozen for up to 3 months. Shape dough into balls before freezing. There’s no need to thaw before baking, just add an additional minute to the baking time.

Easy Monster Cookies

- Large cookie scoop
Ingredients
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 8 Tbsp unsalted butter room temperature
- 3/4 cup creamy peanut butter *not all-natural
- 2 large eggs room temperature
- 1 1/2 tsp vanilla extract pure
- 1/2 tsp baking soda fresh
- 1 1/4 cup all-purpose flour unbleached
- 1/4 tsp sea salt fine
- 1/2 cup quick oats
- 1 cup M&M's divided
- 3/4 cup semi-sweet chocolate chips
Instructions
- Using an electric mixer, cream sugars and butter for 2 to 3 minutes until light and fluffy.
- Mix in peanut butter.
- Beat in eggs one at a time. Scrape sides of bowl as needed.
- Beat in vanilla. Set aside.
- In a separate bowl whisk together baking soda, flour and salt.
- Slowly add dry ingredients to wet. Mix on low speed until just combined.
- Using a spoon, stir in quick oats, 3/4 cup of M&M's and chocolate chips.
- Cover bowl with plastic wrap and chill in the refrigerator for 30 minutes.
- Preheat oven to 350 degrees. Line 2 cookie sheets with parchment and set aside.
- Scoop chilled dough with a large, 2.5 Tablespoon cookie scoop then place dough balls on cookie sheets spaced 2 inches apart.
- Bake for 11 to 12 minutes until edges are slightly golden and centers are still soft.
- Remove cookies from oven and top with remaining M&M's
- Allow cookies to cool on the baking sheet for 10 minutes then transfer to a wire rack to cool completely.
- Store cookies in an airtight container at room temperature for up to a week.
