Women can do anything in the workplace, which is ironic since I prefer to do nothing. Don’t get me wrong, I have mad respect for the equal-rights pioneers who protested archaic labor laws like a lynch mob in high heels, it’s just that I don’t think the jobs they fought for are the ones we ended up with. Between pointless meetings, passive aggressive emails and the daily descent into spreadsheet hell, any female who actually enjoys working in corporate America has a bona fide ailment. Until there’s a cure, the best we can do is mass mail get-well-soon cards to our gal pals.
For those infected with this illness, thoughts and prayers to you. I respect your privacy during this difficult time. Privacy being the key word since this definitely isn’t something you should take public. Finding joy in a 9 to 5 is a stigma worse than leprosy. If you’re stricken, self-quarantine immediately because nobody with XX chromosomes wants your corporate cooties. Especially when the side effects mirror pregnancy: increased responsibility, never-ending nausea and no longer recognizing yourself in the mirror. Umm, thanks but no thanks. I’m done climbing the corporate ladder; please, Lord, just let me climb in bed and sleep because pretending to be professional every day is exhausting.
When I say I’m tired, I mean tiredddd. Like I literally haven’t slept through the night since that week in 2020 when I traded sheep counting for Covid-19. Normally I get no rest because I’m too stressed to turn off my brain, but last night it was because two asshat kids thought it’d be funny to ring my doorbell at 2:40am then speed off on scooters. Spoiler alert: I found no humor in the situation. It will, however, be hilarious when the pranksters return to the scene of the crime and slip cartoon-style on the banana peel I strategically placed on the doormat.
You know you’ve reached the pinnacle of adulting when you’re excited about setting a banana trap for nuisance teens. Side note to the monkeys, the banana was not sacrificed in vain. Since I was too wired to sleep, I spent the remaining witching hours making a batch of Banana Brownies and let me tell you: they are magical! If there ever was a sweet worth losing sleep over, it’s these ooey gooey brownies. Packed with moisture from mashed bananas, these fudgy cocoa powder brownies are studded with big fat chocolate chips and taste fan-freaking-tastic. I don’t know whether to blame sleep deprivation or this brownie recipe, but my brain is currently questioning decades of women’s rights progress. Maybe a woman’s place is in the kitchen. In the middle of the night. Making the hands-down best brownies I’ve ever had. Got doubts? Give these Banana Brownies a try then judge for yourself if kitchens trump cubicles.
Before sharing the Chocolate Banana Brownies recipe, here are a few baking tips to help you out:
Ingredient Tips
For the upmost banana flavor, be sure to use overripe bananas that are so brown and covered with bruises that they look like Mike Tyson punched them. For this recipe, you’ll need approximately 2 medium-sized bananas.
Always bake brownies with unbleached flour. Bleach should only be added to brownies for cheating boyfriends, not brownies you’re eating yourself.
For best results, eggs and melted butter need to be at room temperature before beginning.
Preparation Tips
Only bake brownies in a shiny metal pan. Glass and stoneware pans are not recommended for brownies due uneven and prolonged bake times.
Wondering how to tell when brownies are done? Start by inserting a toothpick into the center of brownies. A few moist crumbs clinging to the toothpick means the brownies are ready to be removed from the oven. If the batter is too wet to form crumbs, continue baking and test again in 1 minute increments. Take care to avoid overbaking or brownies will be dry.
How to Store Banana Brownies
Banana brownies will keep up to 3 days at room temperature when stored in an airtight container or up to 5 days in the refrigerator
Can you freeze brownies? Yes! Brownies can be frozen up to 3 months. Before freezing, be sure brownies have cooled completely. Next, slice into individual servings then wrap each in plastic wrap then in aluminum foil and place in an airtight container. Thaw at room temperature before serving.
