I can’t relate to people who forget to eat because food is never not on my mind. Yes, it’s bad English to use double negatives but it’s even badder to skip meals. I don’t think badder is a word, but you get the gist what I’m saying: edibles are high on my priority list. Wait, that could easily be misinterpreted. High and edibles probably shouldn’t be used in the same sentence on this baking blog.

Then again, I just read an article about a woman in California who’s been selling pot brownies for $40 a pop. Forty-freaking dollars! This changes everything. All I have to do is add one green ingredient to my go-to recipe and I’ll be a pot-brownie millionaire in less than a month. Plus, I’ll have enough money to bail myself out of jail when I get arrested. It’s a no-fail business plan.

Of course, it’s just my luck that I was already using my oven for baking apple bread when the pot brownie inspiration hit. The riches from my triple chocolate weed brownies will have to wait. Besides, I spent all my cash on Honeycrisp apples so the priority is putting them to good use. Luckily, there’s no better use for fresh Honeycrisps than scratch-made apple bread.

Moist, sweet and studded with apples, this yeast-free bread is taken to the next level with a fluffy layer of cinnamon frosting. And, if you want to dare a cavity to form in your sweet tooth, swirl some caramel sauce on top. Great for breakfast or as an anytime snack this fragrant bread is one to make again and again.

This recipe was tested with Honeycrisp apples but Granny Smith apples would also work great.

Preparation Tips and Tricks

Bake your bread in a 9 x 5 metal loaf pan. Glass pans require longer bake times and, therefore, are not recommended for this apple bread recipe.

Total bake time for this apple bread is 60 to 65 minutes, but cover loosely with aluminum foil after the first 30 minutes to prevent overbrowning.

Storage Tips for Apple Bread with Cinnamon Frosting

Like my Brown Butter Rum Banana Bread, this recipe is even more flavorful on day two. To store, cover and place frosted bread in the refrigerator up to 5 days.

To make ahead just bake, cool and wrap unfrosted bread in plastic then in aluminum foil and freeze up to 3 months. Thaw overnight in the refrigerator then frost before slicing and serving.

Ingredients
  

Apple Bread

  • 2 cups all-purpose flour unbleached
  • 1 tsp baking powder
  • 1/2 tsp sea salt fine
  • 1 tsp ground cinnamon
  • 8 Tbsp unsalted butter softened to room temperature
  • 1 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 2 cups Honeycrisp apples peeled and diced
  • 2 large eggs room temperature
  • 2 tsp vanilla extract pure

Cinnamon Frosting

  • 1/2 cup cream cheese softened to room temperature
  • 4 Tbsp unsalted butter softened to room temperature
  • 1 tsp vanilla extract pure
  • 1/2 tsp ground cinnamon
  • 1 1/4 cups powdered sugar
  • 2 Tbsp caramel sauce optional

Instructions
 

Apple Bread

  • Preheat oven to 350 degrees. Generously coat a 9 x 5 metal loaf pan with nonstick cooking spray then set aside.
  • In a large mixing bowl, whisk together dry ingredients: flour, baking powder, salt and cinnamon.
  • In a separate bowl, beat butter, brown sugar and granulated sugar together for 2 minutes or until well combined. Scrape down the sides of the bowl as needed.
  • Add eggs, one at a time, and beat until smooth.
  • Add vanilla and beat until incorporated.
  • Reduce mixer speed to low then add dry ingredients to wet, mixing until just barely combined.
  • Add apples to batter, gently stirring by hand with a spoon until evenly distributed then pour into prepared loaf pan. Level top with a spatula. Note: batter will be thick.
  • Bake for 30 minutes then cover loaf with aluminum foil (to prevent overbrowning) and bake for an additional 30 to 35 minutes. Bread is done when a toothpick inserted into the center comes out clean and dry. For best results, avoid overbaking.
  • Cool loaf in pan for 10 minutes before turning out onto a wire rack to cool completely.

Cinnamon Frosting

  • Beat cream cheese with an electric mixer until smooth and creamy – approximately 2 minutes.
  • Add butter and continue beating until combined.
  • Reduce mixer speed to low then add vanilla, cinnamon and powdered sugar. Beat on low until combined then beat on high until light and fluffy.
  • When apple bread has cooled completely, top with cinnamon cream cheese frosting. If desired swirl caramel sauce into frosting.
  • Frosted bread will keep covered in the refrigerator up to 5 days. Unfrosted bread can be covered and stored at room temperature up to 5 days.
