Baked Banana Donuts are moist, fluffy and loaded with comforting flavors. Made with overripe bananas and pantry staples, these donuts are delicious plain or topped with condensed milk frosting and a dusting of cocoa powder.

It’s a culinary paradox that bananas – brown, black and bruised to the point where a monkey would consider them inedible – are the star ingredient in some of the best desserts. Unfortunately, bananas let all that celebrity go to their head, lounging in fruit bowls with the kind of brown, leathery skin that only comes from a lifetime of tanning. On a yacht. Without suncreen.

Covered in squamous cell carcinoma or merely past-its-prime, a splotchy, dark banana is a powerhouse of flavor. By vegging out until it’s old and overripe, this fruit develops an intensified sweetness that can’t be matched by a younger, prettier counterpart. Unlike bananas, I get more bitter as my days progress, but we do share an affinity for unsightly agespots and bruising easily. So there’s that. And the fact that we’re both burned out on banana bread.

I can’t explain it with science, but going from rectangle to round injects fun back into your banana cravings. Like some kind of baking sorsery, this recipe transforms all the best banana bread flavor from a slice to a circle. Ingredient Tips

For the moistest, fluffiest donut texture be sure eggs and milk are at room temperature before beginning.

Be sure to use overripe bananas that are so brown and covered with bruises that they look like Mike Tyson punched them.

Always use the spoon and level method to measure flour. Scooping from the bag overpacks flour into the measuring cup which steals moisture from the donuts.

Preparation Tips

Pipe batter into your donut pan using a zip-top bag with a bottom corner snipped off.

Chill frosting ingredients in the freezer while you prepare donuts.

How to Store Banana Donuts

Donuts taste best the day they’re made but unfrosted donuts can be covered and stored at room temperature up to 2 days. Cover and store frosted donuts in the refrigerator.

Ingredients
  

Banana Donuts

  • 1 1/2 cups all-purpose flour unbleached
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup dark brown sugar packed
  • 1/2 tsp sea salt fine
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup overripe bananas mashed
  • 2 large eggs room temperature
  • 4 tbsp unsalted butter melted and cooled
  • 2 tbsp milk room temperature
  • 1 tsp vanilla extract pure

Condensed Milk Frosting

  • 1/2 cup heavy cream chilled in freezer 30 minutes
  • 1/4 cup sweetened condensed milk chilled in freezer 30 minutes
  • 1/2 tsp vanilla extract pure
  • 1 tbsp cocoa powder for dusting
  • 1/4 cup chocolate chips for garnish

Instructions
 

Banana Donuts

  • Preheat oven to 350 degrees. Spray donut pan with nonstick coating and set aside.
  • In a large bowl, whisk together flour, baking powder, baking soda, sugar, salt and spices.
  • In a separate bowl, whisk mashed bananas, eggs, butter, milk and vanilla until combined.
  • Add wet ingredients to dry, stirring with a wooden spoon until just combined. Take care to avoid overmixing.
  • Pipe batter into donut pan, filling cavities 3/4 of the way.
  • Bake for 11 to 12 minutes or until tops spring back when pressed with a fingertip.
  • Cool donuts in pan for 3 minutes then remove to a wire rack to cool completely before topping with frosting.
  • Clean donut pan, coat with nonstick spray then repeat the baking process with remaining batter.

Condensed Milk Frosting

  • Beat chilled heavy cream with an electric mixer until medium peaks form, approximately 3 to 4 minutes.
  • Add chilled condensed milk and vanilla then continue beating until incorporated.
  • Cover and refrigerate until ready to use.

Assembly

  • Dip the top of each donut into frosting then swirl until evenly coated.
  • If desired, top frosting with a dusting of cocoa powder and mini chocolate chips.
  • Donuts taste best the day they are made but can be covered and stored up to 2 days in the refrigerator.
